Distilling water helps to remove impurities from the water. Distilling involves heating a liquid until it turns into gas (in this case steam), then collecting the gas and cooling it until it returns to liquid form. Every compound has a different boiling point, so the temperature will determine what is in the gas you are collecting. When you boil water, water molecules rise, leaving behind everything else!

Distilled water is water that has been boiled, and then the gas collected and cooled so it returns back to its liquid form. By doing this the impurities that might be in the water are left behind – giving you pure water to work with! This works because everything has a slightly different (or very different) boiling point, so by heating a liquid to the correct temperature you can turn that to its gas forma nd collect it and cool it back to a pure liquid. This process is called distillation.

Dear Sarahb; Distilled water has been explained very well by Vanessa and Kym. I found in the internet distillation of sea water to obtain drinking water was practiced since at least 200AD.
In chemistry and biological laboratories, deionized water may substitute the distilled water because it is cheaper. However more pure water is need for experiments, double distilled water could be used.

the water from your water tap and water you find in the ocean or rivers is not pure water (not pure H2O molecules). You’ll usually find salt molecules, calcium and other particles in there.
Distilled water means that the water is now pure and ONLY contains H2O molecules. No more salt, calcium or other compounds.
To do this, you can boil water. The H2O molecules will turn into steam. If you can then collect the steam and coll it down again, the H2O molecules will go from steam back into liquid form and that’s how you get super pure water!
For my experiments, I sometimes need distilled water, because if it is not pure, the other particles in the water may react with my experiment and make my experiment fail!
